Ingredients

  1. unsalted butter - 300 grams (cold, approximately 1.5 cups)
  2. powdered sugar - 200 grams (gradually added for best mixing)
  3. eggs - 2 (room temperature, added gradually)
  4. milk - 100 ml (room temperature)
  5. orange vanilla flavoring - watch the video to see (from Dream brand, approximately 1.5 packets)
  6. cake and biscuit flour - 500 grams (protein content 8-10 grams per 100 grams, fine flour preferred)
  7. baking powder - 4 grams (small spoonful, about 4 grams)
  8. salt - 1 gram (a very small pinch, about 1 gram)

Instructions

  1. Cream the butter: Beat the cold unsalted butter for about 1 minute until creamy. Stop beating and scrape down the sides.
  2. Add powdered sugar: Gradually add powdered sugar while beating at slow speed to avoid sugar flying out. Beat for 5-8 minutes, stopping every 2 minutes to scrape the sides, until the mixture is fluffy and creamy.
  3. Add eggs: Add eggs gradually at room temperature, beating until each egg is fully incorporated and the mixture remains fluffy and creamy.
  4. Add milk and orange vanilla flavor: Add room temperature milk and orange vanilla flavor gradually while mixing at moderate speed until combined.
  5. Add dry ingredients: Mix flour, baking powder, and salt. Add to the wet mixture and stir with a mixer or wooden spoon just until flour disappears. Avoid over-kneading to keep biscuits soft and light.
  6. Shape the biscuits: Place dough in a piping bag without overfilling. Pipe onto a greased tray or baking mat. Press and shape the biscuits to be medium thickness for best texture.
  7. Bake: Preheat oven to 180°C (adjust between 160-200°C depending on oven strength). Bake on the middle rack with heat from below until golden brown underneath, then switch on the grill to brown the top. Remove when golden all around and let cool completely before storing.
