Ingredients

  1. calamari - 4
  2. breadcrumbs - 150 g (homemade recommended)
  3. Panko breadcrumbs - to taste (for topping)
  4. Pecorino Romano - 30 g (grated)
  5. capers - 1-2 Tbsp (1-2 Tbsp, adjust to taste)
  6. parsley - 1 bunch (fresh, chopped)
  7. lemons - 2
  8. garlic cloves - 2 (1 peeled, 1 unpeeled)
  9. cherry tomatoes - 200 g (juicy)
  10. basil - 1 bunch (fresh)
  11. extra virgin olive oil - as needed (EVOO)
  12. salt - to taste
  13. pepper - to taste

Instructions

  1. Prepare Calamari: Wash and clean the calamari. Chop the tentacles into small pieces and marinate with lemon zest and juice from half a lemon, and a pinch of salt.
  2. Make the Filling: Combine breadcrumbs, Pecorino, parsley, pepper, lemon zest from one lemon, juice from 1½ lemons, crushed garlic clove, capers, and EVOO. Mix well, then add the marinated calamari tentacles. Adjust with more EVOO if needed to achieve a moist mixture.
  3. Stuff the Calamari: Fill each calamari tube about one-third full with the breadcrumb mixture. Seal the open end with a toothpick.
  4. Prepare for Baking: Place stuffed calamari in a baking dish lined with baking paper. Drizzle with EVOO, sprinkle panko on top, and distribute halved cherry tomatoes and an unpeeled garlic clove around the calamari. Season tomatoes with EVOO, salt, and pepper.
  5. Bake: Bake at 180°C / 356°F for 40 minutes or until the calamari are lightly golden.
  6. Serve: Serve the baked calamari with the roasted cherry tomatoes, fresh basil, and the delicious juices from the baking dish.
