Instructions
- Prepare crunchy pistachio mixture: Make the crunchy pistachio mixture that will be used for the chocolate bar base and the disc topping.
- Cut pistachio biscuit: Cut pistachio biscuit into rounds and set aside.
- Make pistachio marmalade: Cook together water, heavy cream, pistachio paste, sugar, and agalaga. Chill overnight and then blend until smooth.
- Whip green tea ganache: Whip the chilled green tea ganache to medium soft peaks.
- Assemble dessert layers: Fill each silicon mold a little more than half full with the whipped ganache. Add the frozen pistachio marmalade insert, followed by the pistachio biscuit, and then finish with the crunchy pistachio disc on top.
- Coat dessert: Dip the assembled dessert in chocolate agalaga or use a compressor-driven spread technique to coat with a glossy thin chocolate shell.
