Instructions

  1. Prepare crunchy pistachio mixture: Make the crunchy pistachio mixture that will be used for the chocolate bar base and the disc topping.
  2. Cut pistachio biscuit: Cut pistachio biscuit into rounds and set aside.
  3. Make pistachio marmalade: Cook together water, heavy cream, pistachio paste, sugar, and agalaga. Chill overnight and then blend until smooth.
  4. Whip green tea ganache: Whip the chilled green tea ganache to medium soft peaks.
  5. Assemble dessert layers: Fill each silicon mold a little more than half full with the whipped ganache. Add the frozen pistachio marmalade insert, followed by the pistachio biscuit, and then finish with the crunchy pistachio disc on top.
  6. Coat dessert: Dip the assembled dessert in chocolate agalaga or use a compressor-driven spread technique to coat with a glossy thin chocolate shell.
