  5. flour - 1 tablespoon (for coating)
  6. semolina - 1/2 tablespoon (coarse)
  7. cumin - 1/2 tablespoon (ground)
  8. starch - 1/2 tablespoon (for coating)
  9. paprika - 1/2 teaspoon (for flavor)
  10. dried coriander - 1 tablespoon (for flavor)
  11. olive oil - 1/4 cup (for frying)
  12. onion - 1/2 (grated)
  13. garlic - a few (cloves, grated)
  14. green coriander - 1.5 tablespoons (chopped, for garnish)
  15. hot pepper - to taste (optional, chopped for garnish)

Instructions

  1. Prepare Potatoes: Peel and wash the potatoes, then cut them into cubes.
  2. Boil Potatoes: Immerse the potatoes in water, add salt, turmeric, and baking soda. Boil until just cooked.
  3. Drain Potatoes: Drain the potatoes and place them in a tray.
  4. Mix Coating Ingredients: In a bowl, mix flour, semolina, salt, cumin, starch, paprika, and dried coriander.
  5. Coat Potatoes: Add the coating mixture to the potatoes and mix well to coat evenly.
  6. Prepare Onion and Garlic: Grate half an onion and a few cloves of garlic.
  7. Fry Onion and Garlic: In a frying pan, heat olive oil and sauté the grated onion and garlic for 1-2 minutes.
  8. Combine and Bake: Pour the sautéed onion and garlic over the potatoes, mix well, and spread them out on the tray.
