  2. salt - 1 tablespoon (large spoon)
  3. vinegar - 1 tablespoon (large spoon)
  4. water - enough to cover the potatoes (for soaking, add ice pieces if preferred)
  5. cooking oil - as needed (for frying)

Instructions

  1. Prepare the potatoes: Peel the potatoes and immediately place them in water to prevent browning.
  2. Cut the potatoes: Cut all the potatoes to one thickness by hand to ensure even cooking.
  3. Soak the potatoes: Soak the potatoes in cold water with a tablespoon of salt and vinegar for at least an hour.
  4. Dry the potatoes: After soaking, drain the potatoes well and dry them completely using kitchen towels or napkins.
  5. First fry: Heat the oil to a moderate temperature and fry the potatoes for 3 minutes. Remove and let them drain.
  6. Second fry: Fry the potatoes a second time until they take on a golden color, about three to four minutes. Remove from oil and drain.
