Ingredients

  1. all-purpose flour - 1 cup (135 grams)
  2. caster sugar - 4 tsp (15 grams)
  3. eggs - 2
  4. whole milk - 1 1/2 cups (330 ml)
  5. heavy cream - 1/2 cup (110 ml)
  6. unsalted butter - 3 1/2 tbsp (50 grams)
  7. salt - pinch (pinch)

Instructions

  1. Combine Dry Ingredients: Start by combining all-purpose flour, sugar, and salt in a bowl.
  2. Add Eggs and Milk: Make a well in the center, add your eggs, and start whisking the eggs while gradually adding your milk.
  3. Add Heavy Cream: Add the rest of your milk and your heavy cream, and let the batter rest at room temperature for 1 hour.
  4. Prepare the Pan: Melt your butter in a non-stick pan and then add that to the batter.
  5. Cook the Crepes: Scoop a ladle of batter and move the pan as you drop it in. After 90 seconds, flip it. Cook another 30 seconds on the other side.
  6. Serve: Serve with butter and maple syrup or sugar and lemon. You can fold or roll the crepes as desired.
