Ingredients

  1. turkey thighs or whole turkey cut into pieces - 2-6 pieces (2 to 6 pieces, can use a small whole turkey cut up)
  2. tomato paste - 2-3 tablespoons (used to create a thick sauce base)
  3. oil - watch the video to see (for browning the turkey)
  4. onion - 1 medium (sliced into rings)
  5. green bell pepper - 1/2 (half of a bell pepper)
  6. red bell pepper - 1/2 (half of a bell pepper)
  7. chili pepper - 1 (for heat)
  8. lemons - 3 (cut in half, for cleaning the turkey)
  9. salt - watch the video to see (for seasoning and marinating)
  10. vinegar - watch the video to see (for marinating the turkey)
  11. spices (including cloves) - watch the video to see (used for marinating and cooking)
  12. water - watch the video to see (for boiling and cooking the turkey and sauce)

Instructions

  1. Clean the turkey: Remove all fat from the turkey pieces with a small knife. Rub each piece with lemon halves twice, then rinse. Add salt and vinegar to the turkey and let it marinate for a few minutes.
  2. Boil the turkey: Boil plenty of water and blanch the turkey pieces briefly, then remove them from the water. Add spices including cloves and salt to the turkey and let marinate for at least 30 minutes.
  3. Cook the turkey halfway: Boil the turkey with the spices until it is half cooked. Remove the turkey pieces from the pot and reserve the cooking liquid in another container.
  4. Brown the turkey: Heat some oil in a pot. Mix the tomato paste with a little of the reserved cooking liquid to form a thick mixture. When the oil is hot, add the turkey pieces and brown them on all sides, turning carefully to avoid burning.
  5. Add tomato paste mixture and vegetables: Pour the tomato paste mixture over the turkey pieces gradually. Add the reserved cooking liquid, sliced onions, green and red bell peppers, and chili pepper. Taste and adjust seasoning as needed.
  6. Simmer the stew: Cook the stew for 10-15 minutes until the turkey is fully cooked and the sauce thickens slightly. Optionally, add a little butter and chili near the end for richness and heat.
