Ingredients

  1. Cooking oil - 1-2 tablespoons (for frying)
  2. Boneless chicken - 300 grams (cut into small cubes)
  3. Garlic - 1 tablespoon (crushed)
  4. Soy sauce - 1 tablespoon (for flavor)
  5. Lemon juice - 1 tablespoon (freshly squeezed)
  6. Red chilli - 1/2 teaspoon (crushed)
  7. Cumin seeds - 1 teaspoon (roasted and crushed)
  8. Himalayan pink salt - 1 teaspoon (to taste)
  9. Black pepper - 1/2 teaspoon (crushed)
  10. Fresh coriander - 1-2 tablespoons (chopped)
  11. Olper’s cream - 1/3 cup (for creaminess)
  12. Mayonnaise - 1/4 cup (for creaminess)
  13. Capsicum - 1/4 cup (chopped)
  14. Corn kernels - 1/4 cup (boiled)
  15. Onion - 1/4 cup (chopped)
  16. Cheddar cheese - 30 grams (grated)
  17. Tortilla - as needed (8 inches)
  18. Salad leaf - as needed (for assembly)
  19. Cheese slice - as needed (for assembly)
  20. Cooking oil - 1-2 teaspoons (for frying triangles)
  21. Cheddar cheese - as needed (grated, for topping)
  22. Red chilli - as needed (crushed, for topping)
  23. Fresh coriander - as needed (chopped, for topping)

Instructions

  1. Prepare Creamy Chicken Filling: In a frying pan, add cooking oil, chicken, garlic, and mix well until the chicken changes color.
  2. Add Seasonings: Add soy sauce, lemon juice, red chilli, cumin seeds, pink salt, and black pepper. Mix well and cook on medium flame for 4-5 minutes, then cook on high flame until it dries up.
  3. Add Fresh Ingredients: Add fresh coriander and mix well. Let it cool.
  4. Combine Creamy Ingredients: Add cream, mayonnaise, capsicum, corn kernels, onion, and cheddar cheese to the cooled chicken mixture and mix well.
  5. Assemble Tortilla Triangles: Cut tortilla in half, add salad leaf, cheese slice, and prepared creamy chicken filling. Apply flour slurry on the edges, fold to make a triangle, and press to seal.
  6. Cook Tortilla Triangles: In a frying pan, add cooking oil, place tortilla triangles, cover, and cook on low flame from both sides until light golden (1-2 minutes). Flip, add cheddar cheese, red chilli, and fresh coriander, cover, and cook on low flame until cheese melts.
