Ingredients

  1. penne rigate - 300 g (Preferably from Pastificio Liguori)
  2. smoked salmon - 200 g
  3. Philadelphia Cream Cheese - 150 g
  4. lemon - 1
  5. brown onion - 1/4 (chopped)
  6. parsley - 1 bunch (fresh bunch, chopped)
  7. capers - to taste
  8. salt - to taste
  9. black pepper - to taste
  10. extra virgin olive oil - 3-4 Tbsp (EVOO)

Instructions

  1. Prepare the Salmon: Slice the salmon into small strips and set aside.
  2. Sauté Onions: Place a large pan over medium-low heat, add EVOO and sauté the chopped onion until golden brown. Add a splash of water if needed to prevent sticking.
  3. Add Parsley: Stir in the chopped parsley and a bit more EVOO if needed.
  4. Cook the Pasta: Bring 1 litre of water to a boil, add 1 tablespoon of salt, then the pasta. Cook according to packet instructions.
  5. Add Lemon and Capers: Zest the lemon over the pan and squeeze in the juice. Add the capers, season with salt and pepper, and stir.
  6. Combine Pasta and Sauce: Drain the pasta, reserving some pasta water. Add pasta to the sauce, toss with a splash of pasta water. Add more if needed.
  7. Add Cream Cheese and Salmon: Stir in the cream cheese until melted and creamy. Turn off the heat and gently stir in half of the salmon.
  8. Serve: Plate the pasta, top with remaining salmon strips, and garnish with parsley.
