  1. cooked chickpeas - 700 grams (1 jar (25 oz / 700 grams), rinsed and drained)
  2. plain Greek yogurt - 150 grams (5 oz (150 grams), low-fat used; can substitute full fat, non-fat, or plant-based yogurt)
  3. Dijon mustard - 15 grams (1 tablespoon (15 grams))
  4. English cucumber - 130 grams (1 cup chopped (130 grams))
  5. red onion - 50 grams (1/3 cup chopped (50 grams))
  6. dill pickles - 35 grams (1/4 cup chopped (35 grams))
  7. garlic cloves - 2 cloves (2 cloves, finely grated or chopped)
  8. chives - 6 grams (2 tablespoons chopped (6 grams))
  9. fresh lemon juice - 15 ml (1 tablespoon (15 ml))

  11. freshly cracked black pepper - watch the video to see (generous portion to taste)
  12. sandwich bread - 2 slices (2 slices, lightly toasted; whole wheat or preferred bread)

Instructions

  1. Prepare Chickpeas: Drain and rinse the cooked chickpeas under water. Shake off excess water and transfer to a large bowl.
  2. Mash Chickpeas: Using a potato masher or large fork, mash the chickpeas until semi-mashed, leaving some chunks for texture.
  3. Mix Ingredients: Add Greek yogurt, Dijon mustard, chopped cucumber, red onion, dill pickles, grated garlic, chopped chives, and fresh lemon juice to the mashed chickpeas. Season with sea salt and freshly cracked black pepper. Mix well until combined. Add more Greek yogurt if mixture is not creamy enough.
  4. Toast Bread: Lightly toast the sandwich bread slices to prevent sogginess when adding the chickpea mixture.
  5. Assemble Sandwich: Spread a generous amount of the creamy chickpea mixture over one slice of toasted bread. Top with the second slice of toast to form a sandwich.
