Instructions

  1. Prepare the Pesto: Combine basil pesto, roasted slivered almonds, garlic, and olive oil in a food processor. Blend until smooth. Adjust the consistency with more olive oil if necessary.
  2. Sauté the Chicken: Heat oil in a pan over medium heat. Sauté chicken pieces until golden brown and cooked through. Season with salt and pepper to taste.
  3. Cook the Pasta: Cook pasta according to package instructions until al dente. Drain and set aside.
  4. Combine Ingredients: In the pan with the sautéed chicken, add cherry tomatoes, sun-dried tomatoes, kalamata olives, and a bit of chicken stock. Add the cooked pasta and toss everything together.
  5. Finish the Dish: Stir in the prepared pesto, adjusting the quantity to taste. If using, add butter, cherry, anise-flavored spirit, and lemon zest. Mix well until everything is heated through and evenly coated.
