Ingredients

  1. pasta - 200 grams (ear-shaped pasta or pasta of choice)
  2. broccoli - 150 grams (cut into florets)
  3. salt - 1 tablespoon (for boiling water)
  4. olive oil - 3 tablespoons (for sautéing garlic and chili flakes)
  5. garlic - 3 cloves (finely sliced or minced)
  6. chili flakes - 1 teaspoon (adjust to taste)
  7. pasta water - watch the video to see (reserved from cooking pasta)
  8. butter - 2 knobs (about 2 tablespoons) (for finishing)
  9. parmesan cheese - 2 tablespoons (grated, for finishing)
  10. lemon - 1/2 lemon (juice for finishing)

Instructions

  1. Boil Pasta and Broccoli: Salt a pot of boiling water and add pasta. When pasta is halfway cooked, add broccoli florets and bring back to a boil.
  2. Prepare Garlic and Chili Oil: In a separate pan, heat olive oil. Add garlic and cook until lightly golden brown. Add chili flakes and cook for 10 seconds.
  3. Add Pasta Water: Add some reserved pasta water to the garlic and chili oil to stop the cooking.
  4. Combine Pasta and Broccoli: When pasta is almost done, add pasta and broccoli to the pan with garlic and chili oil. Add more pasta water as needed and cook down until broccoli turns into a sauce.
  5. Finish the Dish: Turn heat to low. Stir in butter, parmesan cheese, and a squeeze of lemon juice.
  6. Serve: Plate the broccoli pasta and enjoy.
