Ingredients

  2. cilantro - 1 bunch (1 bunch)
  3. basil - 3 oz (3 oz, 1 bunch)
  4. fresh mint - 1 small bunch (1 small bunch)
  5. garlic - 3 cloves (3 cloves)
  6. shallots - 2 medium (2 medium or 1 large, finely chopped)
  7. avocado oil - 1/3 cup (1/3 cup, chilled)
  8. olive oil - 2/3 to 1 cup (2/3 to 1 cup)
  9. chili flakes - 1/2 tsp (1/2 tsp)
  10. kosher salt - 1 tsp (1 tsp)
  11. red wine vinegar - to taste (for seasoning, mix 50/50 with lime juice)
  12. lime juice - to taste (for seasoning, mix 50/50 with red wine vinegar)
  13. picanha steak - 1 piece (1 large piece, scored and seasoned with salt)
  14. pizza dough - 1 ball (Neapolitan style, homemade or store-bought)
  15. tomato sauce - to taste (homemade or store-bought)
  16. mozzarella cheese - to taste (shredded)
  17. peppers - to taste (sliced, assorted colors)
  18. onion - to taste (sliced)

Instructions

  1. Prepare the Chimichurri Sauce: Blanch half of the parsley, cilantro, mint, and basil in boiling water, then shock in ice water. Squeeze out excess water and blend with garlic, shallots, chili flakes, and avocado oil. Add fresh herbs and blend again. Finish by blending in olive oil and salt. Season with a 50/50 mixture of red wine vinegar and lime juice before serving.
  2. Cook the Picanha Steak: Score the fat cap of the picanha steak, season with salt, and cook in a preheated pizza oven at around 625°F for approximately 20 minutes or until it reaches an internal temperature of 125°F. Let it rest for 10 minutes.
  3. Assemble and Bake the Pizza: Stretch out the pizza dough, apply a thin layer of tomato sauce, sprinkle mozzarella cheese, and add sliced peppers and onions. Bake in a preheated pizza oven at a high temperature for about 2 minutes.
  4. Finish and Serve: Thinly slice the rested picanha steak. Top the baked pizza with steak slices and drizzle with the prepared chimichurri sauce. Serve immediately.
