matcha powder - 2-4 tsp (for chocolate lid and cheesecake layer)
blueberry jam - 2 tsp (homemade preferred)
berries - to taste (like raspberry and blackberry to decorate)
cream cheese - 200g
yogurt - 100g (homemade preferred)
butter milk - 100ml (from homemade butter)
sugar - 30g
lemon juice - 1 tbsp
agar powder - 5g (for cheesecake layer)
hot water - 2 tbsp (for dissolving agar)
agar powder - 4g (for agar layer)
water - 500ml (for agar layer)
Instructions
Prepare Chocolate Lid: Chop the white chocolate and melt it. Sieve the matcha powder. Split the melted chocolate in half and mix matcha powder in one of them. Pour the matcha chocolate in a tray and draw lines with white chocolate. Press a cookie cutter or a glass into the chocolate to make a lid and place it into the fridge to harden.
Mix Cheesecake Layer: Whisk cream cheese, yogurt, and butter milk in a bowl. Mix half with matcha powder and half with the blueberry jam. Pour the cream in a glass and keep it in a fridge.
Prepare Agar Layer: Boil agar powder and water. Mix with matcha powder and blueberry jam, then pour it on the cream cheese layer.
Decorate: Decorate with berries and the chocolate lid. For a fun effect, use dry ice between the cups and vases and pour water into it before serving.
