Ingredients

  1. white chocolate - 200g
  2. matcha powder - 2-4 tsp (for chocolate lid and cheesecake layer)
  3. blueberry jam - 2 tsp (homemade preferred)
  4. berries - to taste (like raspberry and blackberry to decorate)
  5. cream cheese - 200g
  6. yogurt - 100g (homemade preferred)
  7. butter milk - 100ml (from homemade butter)
  8. sugar - 30g
  9. lemon juice - 1 tbsp
  10. agar powder - 5g (for cheesecake layer)
  11. hot water - 2 tbsp (for dissolving agar)
  12. agar powder - 4g (for agar layer)
  13. water - 500ml (for agar layer)

Instructions

  1. Prepare Chocolate Lid: Chop the white chocolate and melt it. Sieve the matcha powder. Split the melted chocolate in half and mix matcha powder in one of them. Pour the matcha chocolate in a tray and draw lines with white chocolate. Press a cookie cutter or a glass into the chocolate to make a lid and place it into the fridge to harden.
  2. Mix Cheesecake Layer: Whisk cream cheese, yogurt, and butter milk in a bowl. Mix half with matcha powder and half with the blueberry jam. Pour the cream in a glass and keep it in a fridge.
  3. Prepare Agar Layer: Boil agar powder and water. Mix with matcha powder and blueberry jam, then pour it on the cream cheese layer.
  4. Decorate: Decorate with berries and the chocolate lid. For a fun effect, use dry ice between the cups and vases and pour water into it before serving.
