extra virgin olive oil - 1/2 cup
fine sea salt - 1/2 teaspoon (adjust if using kosher salt)

Instructions
Soak Shallots: Soak shallots or red onion in cold water for 2-3 minutes to dilute their flavor.
Prepare the Vinaigrette Base: Drain the water from shallots. In the same jar, combine red wine vinegar, extra virgin olive oil, fine sea salt, and black pepper.
Add Flavors: Optionally, add thyme or other herbs for additional flavor.
Serve: Shake well before serving. Can be stored in the fridge for a couple of weeks.
