Instructions

  1. Make Caramel: Cook sugar until it caramelizes to a deep brown. Remove from heat, add butter and lemon juice, then pour caramel into a greased loaf pan. Set aside.
  2. Prepare Banana Topping: Peel half the bananas. Slice into two slices to cover the bottom of the pan (which will become the top) and into three slices to cover the sides and corners. Trim and save scraps for banana mixture.
  3. Make Banana Mixture: Combine ripe, dried, and fresh bananas with lemon juice, sugar, and nutmeg. Puree with an immersion blender until smooth.
  4. Make Cake Batter: Cream softened butter with sugar and a pinch of salt. Microwave butter briefly if needed to soften. Beat until smooth. Add the first egg and mix until homogenized. Add 10% of sifted flour mixture (flour, baking powder, baking soda) to prevent separation. Add remaining eggs and beat until fluffy.
  5. Combine Batter and Banana Mixture: Incorporate the banana mixture into the batter. Then add the remaining sifted flour mixture and mix until combined.
  6. Assemble and Bake: Pour batter into the prepared pan 2/3 full. Bake in a fan oven at 330°F (160°C) for 1 hour. Let cool completely, chill, then demold.
