Ingredients

  1. Onion - 2 medium (medium size)
  2. Tomatoes - 2 medium (medium size)
  3. Green chillies - 5-6 (whole)
  4. Ginger - 1 inch (fresh piece)
  5. Garlic cloves - 6-7 cloves (peeled)
  6. Fresh coriander - handful (handful for blending)
  7. Mint leaves - handful (fresh)
  8. Water - ¼ cup or as required (for blending and cooking)
  9. Cooking oil - 4-6 tablespoons total (for frying and cooking)
  10. Boiled eggs - 5 (pricked with fork before frying)
  11. Himalayan pink salt - 1 teaspoon (or to taste)
  12. Coriander powder - 1 teaspoon (dhania powder)
  13. Turmeric powder - ¼ teaspoon (haldi powder)
  14. Cumin powder - ½ teaspoon (zeera powder)
  15. Chaat masala - ½ teaspoon
  16. Garam masala powder - ½ teaspoon
  17. Black pepper powder - ½ teaspoon (kali mirch powder)
  18. Red chilli powder - ½ teaspoon (lal mirch powder, or to taste)
  19. Olper’s Cream - ½ cup
  20. Fresh coriander - 1-2 tablespoons (chopped for garnish)
  21. Green chilli - 1 (sliced for garnish)

Instructions

  1. Prepare blended masala paste: In a blending jug, add onion, tomatoes, green chillies, ginger, garlic, fresh coriander, mint leaves, and water. Blend well and set aside.
  2. Fry boiled eggs: Heat cooking oil on a griddle. Prick boiled eggs with a fork and fry them until light golden. Remove and set aside.
  3. Cook masala paste: On the same griddle, add cooking oil and the blended paste. Mix well and cook on medium flame until oil separates, about 4-5 minutes.
  4. Add spices: Add Himalayan pink salt, coriander powder, turmeric powder, cumin powder, chaat masala, garam masala powder, black pepper powder, and red chilli powder. Mix well and cook on low flame for 3-4 minutes.
  5. Add water and cream: Add water and mix well. Turn off the flame, add Olper’s cream, then turn on the flame again. Mix well and cook for 1-2 minutes. Cover and cook on low flame for 3-4 minutes.
  6. Combine eggs and finish cooking: Place halved eggs in the gravy, pour the masala over them. Sprinkle fresh coriander and sliced green chilli. Cover and cook on low flame for 1-2 minutes. Serve hot.
