Ingredients

  1. onions - 1 kg (about 1 kilogram, sliced into wings)
  2. hot pepper - watch the video to see (to taste)
  3. garlic - watch the video to see (sliced)
  4. tomatoes - 250 g (about 250 grams, cut into small cubes)
  5. powdered demi-glace sauce - 2 tbsp (2 tablespoons)
  6. black pepper - watch the video to see (to taste)
  7. salt - watch the video to see (to taste)
  8. powdered cardamom - a pinch (a pinch)
  9. seven spices - a pinch (a pinch)
  10. sugar - 1 tsp (a small spoon)
  11. Akkawi cheese - watch the video to see (quantity for layering, watch the video to see)
  12. boiling water - 2 cups (2 cups)

Instructions

  1. Prepare the onion mixture: Slice about 1 kg of white onions into wings. Mix with hot pepper, sliced garlic, 250 g diced tomatoes, 2 tablespoons powdered demi-glace sauce, black pepper, salt, a pinch of powdered cardamom, seven spices, and a small spoon of sugar. Knead all ingredients together well.
  2. Layer the casserole: In the bottom of the casserole or pressure cooker, add a layer of the onion and vegetable mixture. Add a layer of Akkawi cheese. Then add a second layer of the onion mixture. Repeat layering as desired, finishing with the onion and vegetable mixture on top.
  3. Add water and cook: Pour 2 cups of boiling water over the layered mixture. Close the pressure cooker tightly and cook for about 1 hour until the meat is melted and cooked.
  4. Alternative oven cooking method: If using an oven, cover the casserole very well and cook on very high heat for 30 minutes, then reduce the heat and continue cooking until the meat is melted and cooked.
  5. Serve: Serve the Akkawi casserole hot with white rice.
