Ingredients

  1. black-eyed beans - watch the video to see (soaked overnight and peeled)
  2. red chilies - 4
  3. habanero chili - 1 (optional, adjust to taste)
  4. onions - 2 (medium-sized, quartered)
  5. water - 60 mL (for blending)
  6. salt - to taste (add just before frying)

Instructions

  1. Prepare the beans: Soak the black-eyed beans overnight. Rub the beans between your palms to peel the skin off. Rinse and repeat this process 4-5 times until all skins are removed.
  2. Blend the ingredients: Combine the peeled beans, red chilies, habanero chili (if using), and onions in a blender. Add 60 mL of water and blend into a smooth, thick paste.
  3. Prepare the mixture: Divide the mixture in two if making another recipe. Chop some additional onions finely and add to the mixture for texture and flavor. Add salt just before frying.
  4. Fry the Akara: Heat oil in a frying pan over medium heat. Scoop no more than a tablespoon and a half of the bean paste into the oil. Fry until golden brown and crunchy, about 5 minutes, turning consistently for even cooking.
