Wash the mandarins and pat dry. 2. Peel randomly half of the mandarins and discard the peels, then start working on the rest of the mandarins. With a small sharp knife, cut the peel of the mandarins in half horizontally, then in half again. 3. Using a small sharp knife, remove the white loose pith from the inside of the peel. 4. Place the peeled mandarins in a medium bowl, cover with plastic wrap, and refrigerate. 5. Stack a 4 peels one on top of the other, and cut into thin julienne strips, then cut the strips in half to make smaller strips. Place in a bowl. 6. In a medium pot place, 2 liters of water. Bring to a boil on high heat. Add the peel strips to the boiling water and cook covered on medium heat for 5 minutes. Remove from heat and strain, then rinse under running water. Transfer to the same pot and cover with room temperature water. Change the water at least 10 times during 24 hours to get rid of the bitterness. 7. The next day, take the mandarins out of the fridge and separate the slices. Remove any loose white pith , then with a sharp knife, remove the tough white membrane. (As you see in the video). Place the mandarins slices in a large pot. Add the strained peels, the sugar, and lemon juice. 8. Transfer to the stove and bring to a boil on high heat stirring occasionally until. Reduce the heat to medium-low and cook for 2 hours, stirring from time to time. 9. Pour hot jams into jars, leaving about 1 cm (1/2 inch) headspace. I used 5 half pint (8 oz, 236 ml) jars.
