The Pizzaball Sub

The Pizzaball Sub Meatballs often include a combination of beef, veal, and pork. As long as the ratio of fat to meat is roughly accurate, you can be creative. I happened to have some dry aged beef short ribs and a dry aged brisket point, so I ground both of those up with some pork shoulder. These are all typically really tough cuts, and grinding them up (for something like burgers or in this case meatballs) is a great way to get them tender while maintaining that amazing flavor you can only really get with tougher cuts.
