Stuffed Zucchini Serves: 2 as a main Prep time: 40min Cook time: 1 hour Ingredients - 1 cup basmati rice, washed and soaked in water for 30 mins - 250g lamb mince - 1 shallot, finely diced - 50g soft butter - 0.5 tsp allspice - 0.5 tsp ground cumin - 0.5 tsp ground coriander - 1 tsp salt - fresh black pepper - 2 tbsp olive oil - zest of a lemon - small bunch parsley, finely sliced - 1 tomato, cut into 5 and seeds removed - 1 tin diced tomatoes - 3 cloves garlic - 6 zucchinis Method 1. In a large bowl, mix the lamb mince, drained and soaked rice, butter, spices, lemon zest, olive oil, parsley and season with salt and pepper. 2. Take the zucchinis and cut the tops off, then scoop out the middle with an apple corer. 3. Stuff each zucchini with the lamb and rice mix and fill the top with a piece of tomato. 4. In a large pot add the diced tomatoes with the garlic and season with salt, bring to a light simmer 5. Place the stuffed zucchini into the tomato sauce and simmer on low heat for 1 hour. 6. Remove and serve with some of the cooked tomatoes and some yogurt on top.
