Whole egg, अंडा ½ cup Cornstarch, कॉर्नस्टार्च ½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर 1 tsp Turmeric powder, हल्दी पाउडर ½ tsp Garam masala powder (optional) गरम मसाला पाउडर ½ tsp Black pepper powder, काली मिर्च पाउडर Salt to taste, नमक स्वादअनुसार 2 sprig Curry leaves, कडी पत्ते 1 kg Chicken legs, cut into medium size pieces, चिकन For Dry Masala ½ inch Cinnamon stick, दालचीनी 3 tbsp Coriander seeds, धनिये के बीज 1 tbsp Cumin seeds, जीरा 10-12 no. Green cardamom, हरी इलायची 2 heaped tbsp Black peppercorns, काली मिर्च के दाने For Wet Masala ¼ cup Oil, तेल 2-3 sprig Curry leaves, कडी पत्ते 3 medium Onions, roughly chopped, प्याज 4 no. Green chillies (less spicy & roughly chopped) हरी मिर्च Salt to taste, नमक स्वादअनुसार 1 tbsp Ginger garlic paste, अदरक लहसुन का पेस्ट 1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर ½ cup fresh Tomato puree, ताजे टमाटर की प्यूरी Little water, पानी 2-3 heaped tbsp Prepared dry masala, तैयार किया हुआ मसाला ¼ cup Water, पानी 2-3 sprig Curry leaves, कडी पत्ते Fried chicken, तला हुआ चिकन 3 no. Green chillies (less spicy & cut into halves) हरी मिर्च 2 sprig Curry leaves, कडी पत्ते 2 tsp Lemon juice, नींबू का रस 1 ½ tsp Black pepper powder, काली मिर्च पाउडर For Frying Oil for frying, तलने के लिए तेल Marinated chicken, मैरीनेटेड चिकन For Garnish Coriander sprig, धनिया पत्ता Lemon wedge, नींबू की फांक Process For Chicken Marination ● In a bowl, add eggs, cornstarch, degi red chilli powder, turmeric powder, garam masala powder, black pepper powder, salt to taste, curry leaves, chicken legs and mix it well. ● Keep it aside to marinate it for a while. For Dry Masala ● In a pan, add cinnamon stick, coriander seeds, cumin seeds, green cardamom, black peppercorns and dry roast it for 2-3 minutes until it's aromatic. ● Transfer it to a mixer grinder jar and grind it into fine powder. ● Keep it aside for further use. For Wet Masala ● In a handi, add oil, once it's hot, add curry leaves, onions and saute it for a while until translucent. ● Add green chillies, salt to taste, ginger garlic paste and cook it for a minute. ● Add degi red chili powder, fresh tomato puree and cook it for 5-6 minutes on medium flames. ● Add little water, prepare dry masala and give it a good mix. ● Add water to adjust the consistency, curry leaves, fried chicken and let it simmer for a few minutes on medium flames until it's cooked well. ● Finish it with green chillies, curry leaves, lemon juice, black pepper powder and give it a good mix. ● Transfer it to a serving dish, garnish it with coriander sprig and lemon wedge. ● Serve hot with parotta or steam rice.
