Ingredients - Pikelets: - 125g self raising flour - 1 tbsp caster sugar - 185ml milk - 1 egg - Jam and whipped burnt butter to serve Method 1. Place the flour into a mixing bowl and make a well in the centre 2. Add the milk, egg and sugar and whisk together until you have a smooth batter 3. In a large non-stick pan or well-seasoned skillet over a med-low heat, brush with a little butter 4. Pour in about 2 tbsp of batter per pikelet and cook until you see bubbles forming on the top 5. Once you have a good amount of bubbles (10+) on the top, flip and cook for a further 2-3 minutes 6. Serve with whipped butter and jam Ingredients - Whipped Burnt Butter - 100g butter - 1 tbsp cream (or milk) - Pinch of salt (if your butter is unsalted) Method 1. Place the butter into a pot and over a med-high heat, let it melt/burn until it is a golden/brown colour 2. Pour into a bowl and place that bowl into a bowl of ice so it cools during Step 3. 3. Whisk for 2-3 minutes and then add the cream and salt 4. Whisk for a further 2-3 minutes or until it’s the consistency of ice cream
