A riff on the old fashioned that is on the sweeter side but you should find balance and the nuanced flavours of menthol and richness from the PX sherry. Lower to a simmer until it reduces to one 1/6th it's original volume. I added a little cinnamon, freshly grated nutmeg and orange zest too.
