This recipe was requested by a guest of mine whom I've interviewed for the 'Hidden Gem' series. The recipe is packed with unusual flavours like Apple Mint and Grapefruit Mint. These were herbs I discovered when I visited my local Garden Centre. Just as the name describes the herbs do smell of Apple and Mint, Graperfruit and Mint respectively. You can substitute the Apple/Grapefruit Mint for normal Mint. The dish was enjoyed with Banku (a steamed fermented Corn and Cassava pliable dumpling popular in Ghana) not as you know it.
