Follow me on instagram: https://instagram.com/wayoframen Iekei is a style of tonkotsu ramen created in the Yokohama area by a shop called Yoshimura-ya. Iekei is known for its pork and chicken bone soup blend, a shoyu tare, chi-yu chicken oil and spinach and nori for toppings. I didn't have all the right ingredients to make this properly, so this is just an Iekei inspired bowl of ramen, but it still tasted really great. This style of tonkotsu ramen isn't super popular here in the west, but I think if you try it, you'll like it.
