Follow me on instagram: https://instagram.com/wayoframen Chuka soba is the original style of ramen that the Japanese adapted from Chinese noodle soup. The name can be kind of confusing because 'soba' typically refers to buckwheat noodles in Japanese, but the name actually means "Chinese Soba". The original Chuka soba was called 'Shina soba' which had the exact same meaning but is no longer said because Shina is now has a pejorative connotation to it. My guess is that when they first ate Chinese noodles, they had no other way to explain it so they just called it "Chinese soba". I'm loosely following a recipe from a Japanese ramen book using whatever ingredients I could find locally. I'll list the real ingredients here if you can find them, please use them instead.
