It's an old school inspired chuka soba aka, old school shoyu ramen. Its interesting because it has no dashi components in the soup, just chicken and pork. The tare for this bowl is very simple too. Despite all this, I think its a great bowl of shoyu ramen and is even better if you simplify it even more and swap the aroma oil with just plain chicken fat.
