Ingredients - 4 potatoes, peeled and cut into 6 - 250g ham, diced - 2 tbsp seeded mustard - 1 bunch chives - 2 eggs - 4 tbsp flour - Grapeseed oil for frying Method 1. Boil the potatoes starting in cold water until they are fork-tender. 2. Place the diced ham, eggs, mustard and chives into a bowl and mix. 3. Once the potatoes are cooked, drain well and mash. 4. Fold through the ham mixture. 5. Add the flour and mix. 6. Shape into patties and leave on a floured surface until ready to cook. 7. In a large fry pan on medium heat, add the oil. 8. Once the oil is hot, add the ham cakes and cook for 5-6 minutes on each side or until golden brown. 9. Serve with basil pesto or tomato chutney. 10. Enjoy!
