Instructions
Prepare the Vegetables: Cut the yellow and red peppers, carrots, and zucchini into desired shapes.
Heat the Wok: Heat the wok and add seed oil.
Sauté the Vegetables: Add sliced garlic, spring onion, ginger, chili pepper, and then the peppers, carrots, and zucchini. Sauté on high heat until golden.
Season the Vegetables: Add soy sauce, sesame seeds, and sriracha sauce to the vegetables.
Cook the Udon: Boil the pre-cooked udon for 1 minute.
Combine and Serve: Add the udon to the pan with the vegetables, adjust with soy and spicy sauce, toss, and serve immediately.
