Ingredients

  1. whole milk - 1 liter
  2. cream - 250 g (can use frozen cream)
  3. rice - 175 g (rice pudding type preferred)
  4. water - 2 dl
  5. sugar - 150 g
  6. salt - to taste (a pinch)

Instructions

  1. Prepare the Rice: Rinse the rice to remove dust and excess starch. Then, cook the rice with 2 dl of water until the water is mostly absorbed.
  2. Cook with Milk and Cream: Add the cream and 1 liter of milk to the cooked rice. Bring to a boil and then simmer at low heat for about an hour, stirring every 10 minutes to prevent burning.
  3. Add Sugar and Salt: Once the mixture has thickened, add sugar and a pinch of salt. Stir until the sugar is dissolved.
  4. Bake: Distribute the mixture into bowls and bake at 200°C until the top is caramelized, about 15-20 minutes. Optionally, you can broil for the last 2-3 minutes for extra caramelization.
  5. Cool and Serve: Let the dessert cool at room temperature, then refrigerate overnight. Serve cold or slightly warmed, topped with roasted hazelnuts.
