Instructions
Prepare the Chicken: Clean and pat dry the whole chicken. Season it inside and out with salt and pepper.
Prepare Smoking Mixture: In a wok or deep pan, combine tea leaves, uncooked rice, brown sugar, and optional spices to create the smoking base.
Smoke the Chicken: Place the smoking mixture at the bottom of the wok or pan. Place a rack above the mixture and put the chicken on the rack. Cover tightly with a lid or foil to trap the smoke. Heat over medium heat until smoke starts, then reduce heat to low and smoke the chicken for about 45-60 minutes.
Finish Cooking: After smoking, the chicken can be steamed or cooked further to ensure it is fully cooked through. Let the chicken rest before carving.
Serve: Carve the tea-smoked chicken and serve hot with your choice of sides.
