Ingredients

  1. chicken - 1 kg (cut into serving pieces)
  2. potatoes - 2 medium (peeled and quartered)
  3. carrots - 2 medium (peeled and sliced)
  4. red bell pepper - 1 (sliced into strips)
  5. green bell pepper - 1 (sliced into strips)
  6. garlic - 4 cloves (minced)
  7. onion - 1 medium (chopped)
  8. tomato sauce - 1 cup (canned or homemade)
  9. water or chicken broth - 2 cups (for simmering)
  10. soy sauce - 3 tablespoons (for marinating and seasoning)

  13. cooking oil - 3 tablespoons (for frying)
  14. bay leaves - 2 leaves (optional)

Instructions

  1. Marinate Chicken: Marinate the chicken pieces with soy sauce and a little salt and pepper for about 15-30 minutes.
  2. Sauté Aromatics: Heat cooking oil in a pan. Sauté garlic and onions until fragrant and translucent.
  3. Brown Chicken: Add the marinated chicken pieces and cook until lightly browned on all sides.
  4. Add Tomato Sauce and Simmer: Pour in the tomato sauce and water or chicken broth. Add bay leaves if using. Bring to a boil, then reduce heat and simmer until the chicken is tender.
  5. Add Vegetables: Add the potatoes and carrots. Continue cooking until vegetables are tender.
  6. Add Bell Peppers and Season: Add the sliced red and green bell peppers. Season with salt and pepper to taste. Cook for another 3-5 minutes.
  7. Serve: Remove bay leaves and serve hot with steamed rice.
