Ingredients

  2. lime juice - 1/2 lime (juice of half a lime)

  5. Chinese cooking wine (Shaoxing wine) - watch the video to see (for flavor)
  6. sesame oil - watch the video to see (used sparingly for subtle flavor)
  7. MSG - a tiny bit (optional, used sparingly)
  8. spicy stir fry oil - 1.5 tablespoons (1 to 1.5 tablespoons)
  9. onion - watch the video to see (sliced)
  10. bell pepper - watch the video to see (sliced)
  11. grated ginger - watch the video to see (fresh)
  12. bok choy (or p choy) - watch the video to see (washed and cut into large, uniform pieces)
  13. mushroom flavored soy sauce - 1 tablespoon (about 1 tablespoon)
  14. oyster sauce - 2 tablespoons (about 2 tablespoons)

Instructions

  1. Prepare Shrimp: Peel and devein medium shrimp. Wash with cool water and marinate with the juice of half a lime.
  2. Season Shrimp: Add a bit of salt, light soy sauce, Chinese cooking wine, sesame oil, and a tiny bit of MSG to the shrimp. Stir well to combine.
  3. Heat Stir Fry Oil: Heat a wok on medium flame and add 1 to 1.5 tablespoons of spicy stir fry oil.
  4. Cook Vegetables: Add sliced onion and bell pepper to the wok. Optionally add garlic if available. Stir fry briefly.
  5. Add Ginger and Bok Choy: Add freshly grated ginger and the washed, cut bok choy to the wok. Stir to combine.
  6. Season Vegetables: Add about 1 tablespoon mushroom flavored soy sauce, a tiny bit of salt, and 2 tablespoons oyster sauce. Use the residual water from washing bok choy to create steam to soften the vegetables. Cook for about 2 minutes, avoiding overcooking.
  7. Add Shrimp: Push vegetables to the side of the wok and add the seasoned shrimp. Stir fry until shrimp are plump and cooked through but not chewy, about 2-3 minutes.
  8. Finish and Serve: Turn off the heat to avoid overcooking shrimp. Serve immediately.
