Instructions
Prepare the Salmon: Sprinkle equal parts of kosher salt and sugar evenly and prolifically over the salmon. Wrap tightly in plastic wrap.
Cure: Weigh down the wrapped salmon and place it into the fridge for three full days.
Slice and Serve: Slice the salmon across the grain as thin as possible. Spread a generous layer of cream cheese on a bagel, top with salmon lox, thinly sliced onions, and capers.
