  9. guajillo chilies - 4 chilies (whole dried chilies, softened in hot water)
  10. puulla chilies - 3 chilies (whole dried chilies, softened in hot water)
  11. potatoes - 2 medium (peeled and cut into squares)
  12. zucchini - 2 medium (peeled and cut into squares)
  13. carrot - 1 medium (peeled and cut into squares)

Instructions

  1. Prepare and brown the meat: Heat oil in a pot and add the ground beef. Season with ground black pepper, cumin, and salt. Brown the meat while preparing other ingredients.
  2. Roast tomatoes, onion, and garlic: Roast the tomatoes, onion, and garlic until they develop a roasted flavor. This enhances the taste of the stew.
  3. Soften the chilies: Place guajillo and puulla chilies in a bowl with hot water to soften them.
  4. Prepare vegetables: Peel and chop potatoes, zucchini, and carrot into squares. Chop the cilantro.
  5. Combine ingredients and cook: Add the roasted tomato mixture and softened chilies to the browned meat. Add a little salt and water. Let it boil to blend flavors.
