A batch mojito recipe perfect for parties, made with a mint syrup to avoid muddling, fresh lime juice, white rum, and club soda, garnished with fresh mint.
water - 2 cups + 12 oz (2 cups for mint syrup plus about 12 oz for the batch drink)
sugar - 2 cups (equal parts to water for mint syrup)
fresh mint leaves - watch the video to see (a nice live mint bunch for syrup and a big bush for garnish)
peppermint extract - 1 teaspoon (for mint syrup)
freshly squeezed lime juice - watch the video to see (equal parts to mint syrup in batch drink)
white rum - 750 ml (one full 750 ml bottle for 12 drinks)

Instructions
Make Mint Syrup: In a pot, bring 2 cups of water and 2 cups of sugar to a boil. Add fresh mint leaves by bruising them to release oils and add to the boiling water. Add 1 teaspoon peppermint extract. Let the syrup infuse and cool.
Prepare Batch Drink: In a large container, combine the entire 750 ml bottle of white rum with equal parts of the cooled mint syrup and freshly squeezed lime juice. Add about 12 oz of water.
Serve Mojitos: Pour the batch mixture into glasses, top with club soda. Garnish each glass with a big bush of fresh mint leaves that have been bruised to release oils. Serve with a straw to enjoy the mint aroma.
