  2. champignon mushrooms - 350g
  3. onion - 1
  4. garlic cloves - 2
  5. olive oil - 3 tablespoons
  6. fresh thyme - 1 tablespoon
  7. white wine - 150g
  8. boiling water - 1,200g

  10. butter - 100g
  11. truffle oil - 1 teaspoon (optional)
  12. grated parmesan - 150g

  14. chopped chives - watch the video to see (for serving)
  15. freshly ground pepper - watch the video to see (for serving)

Instructions

  1. Prepare Mushrooms: Sauté mushrooms in a pan with olive oil.
  2. Add Aromatics: Add chopped onion and garlic to the pan, followed by thyme.
  3. Cook Rice: Add arborio rice to the pan, sauté, then deglaze with white wine.
  4. Add Broth and Water: Gradually add hot water and vegetable broth, stirring continuously.
  5. Finish with Butter and Parmesan: Once cooked, turn off the heat, add butter, optionally truffle oil, and parmesan, then mix.
  6. Serve: Serve the risotto garnished with chopped chives, a drizzle of olive oil, and freshly ground pepper.
