Ingredients

  1. eggs - 3 (large, at room temperature)
  2. milk - 1/2 cup (125 ml) (room temperature or warm)
  3. vegetable oil - 1/2 cup (100 grams)
  4. fine white sugar - 1 cup (200 grams)
  5. vanilla - 5 grams (small spoon)
  6. all-purpose flour - 2 cups (250 grams)
  7. baking powder - 10 grams (large spoon)
  8. unsweetened cocoa powder - 2 tablespoons (14 grams) (for chocolate mixture)
  9. milk - 2 tablespoons (25 ml) (for chocolate mixture)

Instructions

  1. Prepare the Pan: Brush a Pyrex pan with ghee or butter, dust with 2 tablespoons of flour, and shake off any excess.
  2. Sift Dry Ingredients: Sift together 2 cups of flour with a tablespoon of baking powder.
  3. Mix Wet Ingredients: Beat together 3 eggs, 1 cup of sugar, and a small spoon of vanilla for 5 minutes until the volume doubles.
  4. Combine Wet and Dry Ingredients: Add 1/2 cup of milk and the oil gradually while mixing at a low speed. Then slowly add the flour mixture, mixing until just combined.
  5. Prepare Chocolate Mixture: Take a cup of the batter aside and mix with 2 tablespoons of cocoa powder and 2 tablespoons of milk until smooth.
  6. Create Marble Effect: Pour the vanilla batter into the pan, then dollop the chocolate mixture on top. Use a chopstick or knife to swirl the two mixtures together.
  7. Bake: Bake in a preheated oven at 170°C (338°F) for 30 minutes. Let cool before serving.
