Ingredients

  1. Chicken Feet - 1 lb
  2. Water - 5 cups (for boiling)
  3. Ginger - 4 slices (sliced)
  4. Green Onions - 2 stalks (cut into 1/2 inch pieces)
  5. Honey - 1 1/2 tbsp
  6. White Vinegar - 1 tbsp
  7. Cooking Oil - 1 1/2 qt (for frying)
  8. Ice Cubes - 6 oz
  9. Cooking Oil - 1 tbsp (for stir frying)
  10. Garlic Cloves - 1/2 cup
  11. Rock Sugar - 1 tbsp
  12. Sichuan Peppercorn - 1 tsp
  13. Bay Leaves - 2
  14. Star Anise - 2 (small)
  15. Red Yeast Rice Powder - 1 tbsp
  16. Chu Hou Paste - 1 1/2 tbsp
  17. Light Soy Sauce - 1 tbsp
  18. Oyster Sauce - 1/2 tbsp
  19. Shaoxing Wine - 1 tbsp
  20. Five Spice Powder - 1/2 tsp
  21. Hoisin Sauce - 1 tbsp
  22. Salt - 1/2 tsp

Instructions

  1. Prep Chicken Feet: Cut off the nails from the chicken feet and cut them in half from the middle.
  2. Boil Chicken Feet: Boil chicken feet with 5 cups of water, ginger slices, and green onions for 15-20 minutes.
  3. Fry Chicken Feet: Fry the boiled chicken feet in 1 1/2 qt of cooking oil at 350°F/180°C for 5-8 minutes until golden yellow. Then drain the oil.
  4. Prepare Sauce: Stir fry garlic cloves, additional ginger slices, and green onions in 1 tbsp of cooking oil. Add rock sugar, Sichuan peppercorn, bay leaves, and star anise. Mix well.
  5. Braise Chicken Feet: Add water, red yeast rice powder, Chu Hou paste, light soy sauce, oyster sauce, Shaoxing wine, five spice powder, hoisin sauce, and salt to the sauce. Bring to a boil, add chicken feet, cover, and cook for 30-45 minutes on medium and low heat.
  6. Steam Chicken Feet: Transfer the chicken feet to a plate in a steamer and steam for 15-20 minutes until soft and tasty.
