Prep Chicken Feet: Cut off the nails from the chicken feet and cut them in half from the middle.
Boil Chicken Feet: Boil chicken feet with 5 cups of water, ginger slices, and green onions for 15-20 minutes.
Fry Chicken Feet: Fry the boiled chicken feet in 1 1/2 qt of cooking oil at 350°F/180°C for 5-8 minutes until golden yellow. Then drain the oil.
Prepare Sauce: Stir fry garlic cloves, additional ginger slices, and green onions in 1 tbsp of cooking oil. Add rock sugar, Sichuan peppercorn, bay leaves, and star anise. Mix well.
Braise Chicken Feet: Add water, red yeast rice powder, Chu Hou paste, light soy sauce, oyster sauce, Shaoxing wine, five spice powder, hoisin sauce, and salt to the sauce. Bring to a boil, add chicken feet, cover, and cook for 30-45 minutes on medium and low heat.
Steam Chicken Feet: Transfer the chicken feet to a plate in a steamer and steam for 15-20 minutes until soft and tasty.
