Wanted to show you my Sourdough bread baking in the oven as a timelapse. It's around 45 minutes overall. The bread had crazy ovenspring. I removed the water source during half the bake. It's a 50% bread and 50% whole wheat flour bread. I had no source of water in the oven, I just sprayed it with water every few minutes. I opened up the oven door every 2-3 minutes at the start and then just sprayed, making sure that no crust forms initially. You want the crust to form during the later stages of the bake.
