Pink Pad Thai

I love the challenge of using these things up, and I loved how these pink noodles turned out! You can use my classic pad thai sauce (or use the sauce for the vegan pad thai recipe if needed) and all I did differently was use beets instead of garlic chives. I added julienned beets in the initial sauteing step as shown in the video. I used frozen pressed tofu, but it doesn’t have to be frozen, you can also use meat of your choice. PS. Don’t bother with 2 types of rice noodles, I did that because I didn’t have enough of one so I had to supplement it with another. And as you can see I had to add them in stages because they take different amounts of time to cook.
