This is the method that bakes you amazing bread and sourdough bread even if you don't have a dutch oven. In fact, I prefer this method over baking with a dutch oven, it has made me some of the best sourdough breads I ever had. Steam is so incredibly important as it allows your bread to rise more in the oven. With a few tricks we can achieve that - no headache, say hi to Ovenspring. The best thing, no dutch oven is needed. If you don't have a stone, screw it, just use 2 trays. This is why a lot of people use a dutch oven at home. The dutch oven is closed and traps all that steam. However, when you want to bake a batard this does not work, unless you have an even bigger dutch oven. Furthermore sometimes you might want to bake on a stone, to be able to bake multiple loaves. What if you want to use a tray for baking buns? Well, does not work. So let me show you how to bake your delicious sourdough without a dutch oven. I have tested multiple methods, but found this method to the most simple and also so most effective one. The bread that we are looking at in the video has incredibly high hydration, 86% hydration. Here you go: 1. Take a bowl that is heat resistant 2. Add a stone or a tray on top of it 3. Heat all to max temperature for 30 minutes 4. Place your loaf on the tray/stone 5. Add another tray on top, ideally one that is a little higher so that steam can be entrapped below 6. Pour in the boiling water into the bowl at the bottom 7.
