Layered Paratha - Paneer kofta Channa Curry - Sev chaat Ingredients: Paneer (Grated) - 300gms Salt - As Per Taste Green chillies - 3 nos Cumin powder - 1 tsp Coriander powder - 1 tsp Chickpea flour - ½ cup All-purpose flour(Maida) - 1 cup Oil - as required Water - as required Whole garam masala - 1 tsp Cumin seeds - 1 tsp Onions (chopped) - 2 no Turmeric powder - ½ tsp Ginger Garlic paste - 1 tsp Tomatoes - 2 nos Red chilli powder - 1 tsp Chana masala powder - 1 tsp Kasuri methi powder - 1 tsp Chana dal (Boiled) - 1 cup Sev - 2 tsp Sweet curd -1 tsp Sweet chutney - 1 tsp Mint chutney - 1 tsp Coriander leaves - 1 spring Curry leaves (Finely Chopped) - 1 tsp Directions: Take Grated Paneer in a bowl, add salt, finely chopped green chillies, cumin powder, finely chopped coriander, chickpea flour mixed it then make them into small dumplings. Heat the hot oil in a frying pan and deep fry the paneer koftas balls till they turn golden brown in colour. Take all-purpose flour(Maida) in a bowl, add some salt, oil, water knead it well and make it soft dough rest it for 15 minutes. In the same oil pan in which we fried the paneer koftas, add whole garam masalas, cumin seeds, chopped onion and salt, Now saute it until they turn into slightly brown in colour. Now add turmeric powder, ginger garlic paste, tomatoes, red chilli powder,chana masala powder, kasuri methi and cook it until all the raw flavours are gone. Then add boiled chana dal,cook it for few minutes by adding water. After few minutes of cooking add the paneer kofta balls to it and simmer it for a minute. At last, add some coriander leaves cook it for few minutes and switch off the flame. Roll the parathas in the same way as shown in the video to get nice layered parathas and rest it for a minute,Now cook it both sides golden brown in color. Chaat preparation: Take the chana curry into a plate by topping up with Sev, Sweet curd, Sweet chutney, Mint chutney, Top it up with finely chopped onions, tomatoes, and coriander leaves.
