You can create a healthy and abundant Thanksgiving table with this delicious vegetable pie! 🥗 Ingredients [Vegan Pie] 2 cups cooked lentils, 2 potatoes, 1 celery stalk, 5 tablespoons olive oil, ½ onion, 2 carrots, 1 cup peas, 200g (brown) button mushrooms, 4 cloves garlic, 3 tablespoons tomato paste, 1 tablespoon soy sauce, 1 cup vegetable broth (or substitute with vegetable stock), Rosemary, Thyme, ½ cup red wine, A pinch of salt, A pinch of pepper [Mulled Wine] 1 bunch red grapes, 1 orange, 1 apple, 1grapefruit, 1 cinnamon stick Instructions 1.Wash the potatoes, carrots, and celery thoroughly. 2.Slice the garlic and chop the onion and parsely. Thinly slice the button mushrooms. 3.Peel the potatoes and carrots with a vegetable peeler, then slice them thinly. 4.In a heated pan, add olive oil, then sauté the garlic and herbs. Add the sliced mushrooms and cook until browned. 5.Add the chopped onion, celery, and the finely chopped leftover potato and carrot. Season with soy sauce, salt, and pepper, and sauté. 6.Pour in the red wine and bring to a boil. Add the cooked lentils and peas, and continue to sauté. 7.Gradually add the vegetable broth while stirring, then mix in the tomato paste and simmer until the mixture thickens. 8.Let the filling cool slightly, then transfer it to an oven dish. 9.Arrange the sliced potatoes and carrots around the filling and drizzle with olive oil, salt and pepper. 10.Bake in a preheated oven at 230°C (450°F) for about 30 minutes. 11.Wash all the ingredients thoroughly, keeping the skins on. 12.Juice red grapes, orange, grapefruit, lemon and apple in a Hurom juicer. 13.In a pot, combine the grape juice and red wine. 14.Put the with the sliced orange, apple, and cinnamon stick. 15.Bring to a boil.
