Different Flour Types - Ancient Flour and modern Flour comparison

In this video I will be showing you different flour types, ancient flour and modern flour in direct comparison. I'll also be talking about the history on some of the flour types shown in the video. We are comparing: - Einkorn - Emmer - Spelt - Rye - Wheat In general the only flour that contains sufficient gluten to create an open crumb is wheat and modern spelt. The other flours also do not require any kneading to develop dough strength. The only thing you have to do is, stir the ingredients of your bread together. That's also why baking with non-wheat is typically a little faster. But to get a lot of oven spring, wheat is your choice. It's hard to say which flour is better, all of them serve a purpose. It really depends on what you are trying to cook. A hearty rye bread might be nice for a soup, whereas an open crumb wheat bread would be amazing for some butter.
