Big Bhature with Black Chana Curry INGREDIENTS: Red chillies - 5 nos. Dry pomegranate - 1 tsp Pepper - 1 tsp Coriander seeds - 1 tsp Cumin seeds -½ tsp Cinnamon sticks - 2 nos. Black cardamom - 2 nos. Green cardamom - 3 nos. Ajwain - ¼ tsp Onions - 2 nos. Salt - As Per Taste Brown Onions - 3 tsp Ginger garlic paste - 1 tsp Corn flour - 2 tsp Oil - As required Tomato puree - 1 cup Tea water - ½ cup Chana dal (soaked) - ½ cup Black salt - 1 pinch Nutmeg powder - 1 pinch Ginger (chopped) - 1 tsp Kasuri methi powder - ¼ tsp Mint leaves - ½ bunch Coriander leaves - 1 bunch All-purpose flour - 1 cup Oil - As required Water - As required DIRECTIONS: Heat in a pan, add red chillies, dry pomegranate, pepper, coriander seeds, cumin seeds, cinnamon sticks, black cardamom, green cardamom, ajwain dry roast it grind into a fine powder. Heat oil in a pan, add the onions, salt, brown, ginger garlic paste, corn flour saute it and until all the raw flavour is gone. Then add tomato puree, masala powder, tea water, soaked chana dal, salt, black salt, nutmeg powder, ginger, kasuri methi powder cook it for 10 minutes close the lid on slow flame. At last, add mint leaves, coriander leaves cook it for some more time. Then switch off the flame. Take semolina in a bowl, add all- purpose flour, baking powder, soda, salt, yogurt, oil, water mix it well and make into a soft dough. Roll into the dough fry it for both sides in hot oil golden in color. Now ready to serve this Big Bhature with Black chana curry in a plate, by toppings with coriander leaves, onions, butter.
