Serves 5-6 Recipe in English: Ingredients: -Boiling water as required -Mutton paya (Mutton trotters) 6 cleaned & washed -Hot water 1 litre -Pyaz (Onion) roughly sliced 1 medium -Adrak lehsan paste (Ginger garlic paste) 1 tbs -Himalayan pink salt ½ tbs or to taste -Haldi powder (Turmeric powder) ½ tsp -Darchini (Cinnamon stick) 1 -Tez patta (Bay leaves) 2 -Saunf (Fennel seeds) 1 tsp -Sabut kali mirch (Black peppercorns) 1 tsp -Laung (Cloves) 3-4 -Badi elaichi (Black cardamom) 1 -Mutton bong (Mutton shank) 250g -Pyaz (Onion) fried ¾ Cup -Dahi (Yogurt) whisked 4-5 tbs -Water 3 tbs -Cooking oil ¼ Cup -Adrak lehsan paste (Ginger garlic paste) 1 tsp -Lal mirch powder (Red chilli powder) 1 tsp or to taste -Dhania powder (Coriander powder) 1 & ½ tsp -Haldi powder (Turmeric powder) ½ tsp -Zeera powder (Cumin powder) 1 tsp -Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp -Garam masala powder 1 tsp -Water ¼ Cup or as required -Himalayan pink salt for adjustment -Hari mirch (Green chilli) sliced 1-2 -Hara dhania (Fresh coriander) chopped -Hara dhania (Fresh coriander) chopped -Adrak (Ginger) julienne -Hari mirch (Green chilli) sliced Directions: -In a boilling water,add mutton trotters,mix well & boil for 2-3 minutes then strain. -In a pot,add mutton trotters,hot water & turn on the flame. -Add onion,ginger garlic paste,pink salt,turmeric powder,mix well & bring it to boil. -In a muslin cloth,add cinnamon stick,bay leaf,fennel seeds,black peppercorns,cloves,black cardamom, tie properly to make a bouquet garni (potli). -Add potli in pot,mix well,cover & cook on low flame for 2-3 hours. -Add mutton shank & mix well,cover & continue cooking on low flame until meat is tender (approx. 1 hour more). -In a spice mixer,add fried onion,yogurt,water,blend well & set aside. -In frying pan,add cooking oil,blended paste,ginger garlic paste,mix well & cook on medium flame until oil separates. -Add red chilli powder,coriander powder,turmeric powder,cumin powder,kashmiri red chilli powder, garam masala powder,mix well & cook on medium flame for 2-3 minutes. -Add water,mix well & cook until oil separates & set aside. -Remove bouquet garni & add prepared masala in a pot & mix well. -Add adjustment salt if required,mix well,cover & cook on low flame for 18-20 minutes. -Add green chilli & fresh coriander. -Garnish with fresh coriander,ginger,green chilli & serve!
